Rock Cakes (Without The Calories)

  • 200 g self-raising flour
  • 50 g Butter, cold
  • 1 pinch salt
  • 25 g caster sugar, + extra 1 tsp for tops
  • 50 g Dried Fruit, mixed, or fruit of choice
  • 1 egg, medium
  • 15 g Milk, adjust for consistency

Recipe's preparation

    Rock Cakes (Without The Calories)
  1. Place flour, butter, salt and sugar into bowl for 10 Seconds at speed 4, or until mixed to a coarse consistency

     

  2. Lightly beat egg and milk

     

    Add to bowl, along with dried fruit of choice

     

    10 Seconds Speed 4 Counter-clockwise operation or until mixed

     

  3. Place 8 spoonfuls on a lined baking tray and dust each top (using total of 1 tsp of castor sugar to cover all cakes)

     

  4. Place in preheated oven for 13 - 15 minutes at 200 degrees/ 180 degrees fan/ gas 6 or until pale golden brown. 

     

  5. Best eaten while warm, or allow to cool on wire rack

Tip

CALORIES ~170 per cake - fat and sugar have both been reduced and each cake is a  bit smaller than typical, but so tasty you will not notice the difference.

FREEZE the cooked and cooled rock cakes in a large freezer bag for up to 2 months.  Defrost them at room temperature for 1 hour.  Warm through on a baking tray in a moderate oven for 5 - 10 minutes or for a few seconds in the microwave.

OPTIONS for flavouring include adding a tsp of mixed spice and/or a tsp of vanilla bean extract to change things up.
