Ingredients

  • 920 g raw brown sugar
  • 200 g full cream milk
  • 60 g unsalted butter
  • 170 g condensed milk

Recipe's preparation

  1. 1. Cook all ingredients 20 minutes/80°C/Speed 4 until the sugar is dissolved.
    2. Cook 50 minutes/Varoma Temperature/Speed 1/Measuring Cup OFF.
    3. Remove the TM lid and scrape any sugary crystals off the side of the bowl into the middle of the mixture, mix 10 seconds/Speed 3.
    4. Cook 10 minutes/Varoma Temperature/Speed 1 until the mixture is a golden/light tan colour. When a small amount is taken out, it should set firm but not solid in a few minutes; the temperature of the mixture will be 113°C. (Cook 10 minutes more or longer if necessary until golden – it can take longer to cook tablet on a rainy or humid day).
    5. Place the internal steaming basket on top of the TM lid and beat 3 minutes/Speed 5/Measuring Cup OFF. (Steam can escape but spits are safely caught by the basket.)
    6. Add flavouring if you wish, such as vanilla essence, rum and raisin, coconut, cherry etc. but turn up the speed gradually if the flavourings are liquid, as they can splash out. Beat again 5 minutes/Speed 7/Measuring Cup OFF/internal steaming basket on top – until the mix is a bit grainy. Immediately pour out into a 23 x 30 cm swiss roll tray or a 25 cm square tin, either non stick or lined with parchment. Leave to cool for 10 minutes, then cut into 2 cm squares. Leave in the tray to cool fully before cutting again and separating the pieces.

Tip

Tablet is a crumbly hard version of Scottish version of fudge.   I found this recipe on the UK Thermomix website just before Christmas.  Tablet reminds me of holidays when I was young so I couldn't resist making it and posting the recipe here.  Even though the cooking takes some time it is worth it the whole 1.2kg it makes!  Be prepared to share

    Delicious. Thank you for sharing this recipe. Made a few different flavours & all turned out perfect. The only problem is stopping everyone in my family having sneaky little snacks. It made perfect gifts for my kids teachers for Christmas. Yumolicious as my son would say.

  • I've made 'stove top' tablet

    I've made 'stove top' tablet many times, and it's always a success - but a hot, time-consuming job!! So glad I can now do it in the thermomix! This is the second time I've made it, but the first time was a total disaster!!!!  So, here are my tips!!! Tablet should NOT be grainy, not at all, crumbly, yes, grainy NO!!!!!!!!! 

     

    In step 1, only add the milk and butter(still set timer/ speed and temp), once the butter has melted, slowly add the sugar a little at a time (use Caster sugar), over about 10 mins until it has all been added. Add the condensed milk (through the hole in the lid) when there are 5 mins to go! This prevents the graininess! I also used the entire tin of condensed milk!

     

    Also, this took longer than the time above! I did the 20 mins, then the 50 mins, and then 25 mins.

    I used to have to travel 200 kilometres to Salamanca market to get my sugary fudge fix. I didn't even know it was Scottish tablet, i just knew it was nicer than the softer chewy fudge........So imagine how happy I was when I made this and it tasted exactly the same and the texture identical.

    I usually make this one on the stove... never again, you wouldnt be able to pick the different in taste or texture.

    It stay hard so prefect for gifts as it wouldnt need to be kept in a fridge, even in hot weather.

    made this today for my scottish husband, he immediately said it was the right texture crumbly not grainy. I followed the advice from the comments by kcm1y about adding the sugar ( granulated ) after heating the butter and milk. Did 4 to 5 of the 10 min heating and mixing till mixture was "soft ball" . I added a teaspoon of vanilla and added an extra 5 minutes to the final beating stage. It set fairly quickly. so much easier than the stove top method, definitely a winner in this household  tmrc_emoticons.p

    ps made it with thermie condensed milk

    WOW!!! tmrc_emoticons.D I used to make Scottish Tablet when I was a teen using my (Scottish) Grandma's recipe but it was always hard work. Haven't made it for about 9years, so thought I'd give it a go in my TM... I still used my Grandma's recipe ingredients but used this method as I didn't know how long it would need to cook for etc. It turned out PERFECT... no more hard work, stirring for what always seemed like hours... Thanks so much for putting this recipe on, its great!

    Hi there, thank you for posting this recipe.  I am the daughter of Scots and my dad used to make tablet for us as kids and I have always wanted to make it for my kids.  I have to comment on an aspect of the recipe that I found confusing.  The recipe asked for raw brown sugar.  (which I had never heard of unless its a reference to something like rapidura?) So I used brown sugar initially and promptly realised that tablet would never be made with brown sugar.  Unfortunately that realisation didn't happen until I had mixed all the ingredients together and then thought tablet would never be that dark or strong tasting.  So now I have tried with raw sugar - have mixed the ingredients for the first stage and sugar not dissolved.  Have cooked it for another ten minutes and sugar still not dissolved.  Just had a look at the original recipe on the UK website and it just calls for granulated sugar - which I believe would be white sugar and the crystals would be smaller than raw sugar.  So next time I will make it (presuming this batch will turn out ok) I would either use white sugar or blitz the raw sugar before the first step.  Don't see much point in trying to make this recipe "healthy" seeings its basically sugar - its an indulgence for a special treat.

    Hope no one else wastes a whole batch of ingredients with that misleading "brown" adjective.

    OMG!! I just made this and it was AWESOME!!!!!!!!!!!!!!!! I tried another recipe for fudge in the thermo and it was a disaster... it was just chewy like caramel. This was the perfect fudgey, creamy, sugary consistency I hoped it would be! YUM!!!!!!!

    Anyone able to tell me how long this should keep? - Fridge/Freezer etc?? (Not that I think it will last long, but always good to know!)
