Simple Fruit Squares

  • 90 g Butter, Cubed
  • 130 g brown sugar
  • 1 egg
  • 230 g Self Raising Flour
  • 140 g Dried Fruit Medley or Chopped Dates

Recipe's preparation

  1. Preheat oven to 180C and line an 18x28cm lamington tin with baking paper.

  2. Insert butterfly and beat butter for 1 minutes on speed 4.  Scrape down bowl.

  3. Add sugar and beat for 1 minute 30 on speed 4.

  4. Add egg and beat for 20 seconds on speed 4.

  5. Add flour and fruit medley and mix for 30 seconds on speed 4.

  6. Place mixture in tin and press gently until evenly distributed in tin.

  7. Bake for 15 to 20 minutes or until lightly golden.  Place on a cooling rack and slice into squares when cooled.  Store in an airtight container.

    Larnie this recipe would work with sultanas.  It would also be nice with dried apricots.
