Sourdough Banana Bread

  • 220 g Ripe banana
  • 250 g Sourdough starter, 100% hydration, fed or unfed
  • 30 g vegetable oil
  • 1 tsp ground cinnamon
  • 100 g brown sugar

  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 pinch salt
  • 1/3 cup toasted nuts or chocolate chips, optional

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Recipe's preparation

  1. Preheat Oven to 180 deg C
  2. Add 220g Banana to mixing bowl, place MC in mixing bowl lid and blendBlend5 sec/speed 3
  3. Add 250g sourdough starter, 30g oil, 1 tsp Cinnamon and 100g Brown sugar to mixing bowl, replace the lid and mix Closed lidBlend10 sec/speed 3
  4. Add 130g plain flour, 1 tsp baking powder, 1/2 tsp baking soda, and a Pinch of Salt. replace the lid and mix again Closed lidBlend 5 sec/speed 4. Scrape down sides of bowl and, if using, add 1/3 cup toasted chopped walnuts or chocolate chips, mix again Closed lidBlend5 sec/speed 3
  5. Pour into prepared loaf pan and bake for 60 minutes. Once baked, cool in pan for 10 minutes before turning out onto a cooling rack to cool completely.
