steamed banana cupcakes

  • 75 grams unsalted butter
  • 2 bananas, very ripe
  • 1 banana ripe, sliced
  • 1 egg
  • 100 grams raw sugar
  • 160 grams milk (any type), cconut, almond, cows
  • 160 grams Self Raising Flour
  • 900 grams water

Recipe's preparation

  1. You will need silicone cupcake molds in order to steam the cakes in the varoma.

     

    1. Melt the butter 40 seconds, 50 degrees, speed 4.

     

    2. Add the 2 very ripe banans, egg, milk and sugar to the bowl. Mix 5 second, speed 6 until combined with the butter. Scrape sides and repeat if necessary. 

     

    3. Add flour, mix 4-5 seconds, speed 4 until combined. Scrape sides and mix again if necessary. 

     

    4. Add a slice of banana to the bottom of each silicone cupcake mold, pour in enough batter to go about half way up the side of each case. You don't have to do this if you don't want to or don't have a banana to use, they taste great either way. 

     

    5. Position the cupcakes in the varoma basket (and tray if they will not all fit in the basket, it depends on the size of your molds)

     

    6. Clean the bowl and add the water. Position the varoma on top of the lid. 

     

    7. Cook Varoma, 25-30 minutes, speed 2 or until a skewer inserted comes out clean. Again this depends on the size of your cupcake or muffin molds.

Tip

The cooking times and serving sizes will vary depending on the size of silcone molds you have. I have used the smaller square Tupperware microsteamer ramekins (as seen in the recipe images) which are about the same capacity as a silicone cupcake pans and also done in a Tupperware muffin form. The muffin form took about 30 minutes to cook while the ramekins were about 20 minutes.

These are great served warm with salted caramel sauce or icecream. I love taking them cold to work as a snack. 

 

I love to use coconut milk but any type will work.
