Recipe's preparation

  1. Preheat Oven to 170 degrees (Fan Forced)
    Add all ingredients except white choc and berries to Thermomix bowl
    Mix 20 seconds/Speed 4.5
    Scrape down sides of bowl, and Mix 20 seconds/Speed 4.5
    Add White Choc and Berries
    Mix 10 secs/Speed 4 Reverse
    Pour into prepared Muffin Tray
    Bake 25-27 mins

Tip

This is a very quick and easy muffin recipe. It produces light, cake-like muffins with chunks of sweet, creamy white chocolate and tangy berries. Fresh or frozen berries can be used. If using frozen berries, add them to the mixture while they are still frozen to help prevent them from colouring the batter. You can use a 12 hole Cupcake tray or 6 hold Jumbo muffin tray. Usually makes about 12 Cupcake size or 9 Jumbo size Muffins.

    I made this recipe today and simply delicious. The only thing I did different was I used all strawberries as I had no raspberries and I put them in with the other ingredients for the last 10seconds as I didn't want lumps of strawberries. It did chop them all up so if you like pieces of strawberries in your muffins don't do it this way. It also made 18 medium muffins, a big hit and thank you for sharing your recipe
