Super moist chocolate cake

Ingredients

10 piece(s)

Cake

  • 125 grams Butter
  • 125 grams caster sugar
  • 40 grams icing sugar
  • 2 eggs
  • dash vanilla essence
  • 80 grams Jam, Raspberry, blackberry, marmalade..your choice
  • 155 grams Self Raising Flour
  • 60 grams cocoa powder
  • 1 teaspoon bicarb soda
  • 250 g Milk
  • 1 tsp instant coffee granules, Dissolved in 1 tblspn hot water ( optional)

Chocolate buttercream

  • 50 grams chocolate, Grated
  • 25 grams unsalted butter
  • 3 teaspoons cream
  • 30 grams icing sugar

Recipe's preparation

    Cake
  1. Grease and line a loaf tin and preheat oven to 180C.

    1. Add chopped butter and sugars to Closed lid.


    2. Cream together, sp4/ 20 seconds. Scrape and repeat.


    3. Add eggs and vanilla essence, sp4/ 30 seconds. Scrape.

    4. Add remain ingredients and blend sp4/ Counter-clockwise operation, 30 seconds. Scrape and repeat for 10 seconds.

    5. Pour into prepared pan and smooth surface.

    6. Bake about 45-50 minutes or until done when tested.

    7. Leave in pan for 10 minutes before turning out onto a wire rack to cool.

    8. Ice with chocolate buttercream icing.

  3. 1. Add all ingredients to Closed lidand blend at sp3/ 50C, 2 minutes or until smooth and melted.

    2. Spread evenly over the top of the cake and leave to set before slicing.

Tip

This chocolate cake is really moist due to the addition of jam.

Use any type you like as I've found it doesn't really alter the taste as much as keep it moist.

it can also be made without the icing, but looks nicer lightly dusted with icing sugar.

    Super easy cake. When making icing i reckon next time u can use button chocolate instead of grating as the buttons will melt in bowl. My icing turned out perfect thick & delicious.
    loved the addition to this recipe with jam.

    I’ve made this cake a number of times but made it dairy free, so I substituted the milk for coconut milk and the butter for nuttelex. It turned out great every time. Love the jam addition, makes it deliciously moist. I use plum jam. Thank you. I didn’t try this icing though.

    I'm making this cake for the 2nd time today. Nice and rich and moist. I had great comments. I had trouble with the icing though. It ran off the cake and was too thin. Could be my scales though. I will ice with different icing today tmrc_emoticons.)

    Really nice and easy! I've added it to my collection. The best thing is you don't need many ingredients and I had everything in my cupboard already. The only thing i chnaged was the icing as i found it a bit thin. I made a choc crema cheese icing instead. Smile

    Lovely cake! I had made some apricot jam and had some left over so used it to make this cake. The comments received were very positive and it was indeed moist, even when cut the next day.

    The icing however is out of this world.... so easy and so delicious!

    I did bake my cake in a square tin as it seemed too much for my loaf tin and found I needed to make a second batch of the icing to cover the cake. Which I'd recommend doing anyway as it is just so darn good!!!

    My family and I really enjoyed this cake. I used raspberry jam and found it added an ever so slight bitterness to it, so a strawberry jam might be better, but in all honesty, it was barely noticable and an allround delicious cake. I have added the recipe to my collection and will definitely make it again.

    This was my first attempt at an "old fashioned" cake in my TM. Being a keen baker, I was skeptical that the TM would do justice to a simple kind of cake. How silly of me!! It completely & utterly exceeded expectations and proved me VERY wrong. What a delicious, moist, fluffy, rich chocolate cake!
