Sweet Cornbread

  • 115 grams Butter
  • 80 grams honey
  • 100 grams raw sugar
  • 2 eggs
  • pinch salt
  • 150 grams plain flour
  • 130 grams polenta
  • 5 grams baking powder
  • 120 grams Milk
  • 130 grams Creamed Corn

Recipe's preparation

  1. Add Butter to bowel and soften for 1 minute, 60 deg, speed 1. (If already soft skip this step

    Add Honey, Raw Suger, 2 Eggs and Salt and mix 5-10 seconds, speed 4.

    Scrape down sides and add Flour, Polenta, Baking powder, Milk and Creamed Corn Blend 10 seconds, speed 4 scrape down sides and blend again 10 seconds, speed 4.

    Pour into well buttered/lined baking tray and bake at 180 degrees for 20-25 minutes.



You can sub the Raw Sugar for Rapadura Sugar and the Milk for Butter Milk.
