Sweet Potato Caramel Mud Cake

Sweet Potato Cake

  • 250 g sweet potato
  • 200 g white chocolate
  • 150 g Butter
  • 30 g water
  • 300 g Dark Brown Sugar
  • 250 g Self Raising Flour
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder

White Chocolate Ganache

  • 110 g white chocolate
  • 60 g cream

Recipe's preparation

    Cake
  1. Chop potato 5 sec/sp 7. Scrape down sides and add water.  Cook 3min/varoma/sp 1.

    Blend 10 sec/sp 7, scrape sides, blend again 10 sec/sp 7.

    Add chocolate, butter and sugar and cook 6 min/90 deg/sp 1.

    Add flour, eggs, vanilla and baking powder then mix 10 sec/sp 4.

    Pour into prepared cake tin and cook 45 min at 175 degrees  until skewer comes out clean.

     

  2. Ganache
  3. Grate chocolate 10 sec/sp 7.

    Add cream and melt 3 min/50 deg/sp 2

    Pour straight over cooled cake or allow ganache to cool then spread over cake.

    Amazing cake!! So moist and good!
    I reduced the sugar to 150g and chucked in a little more sweet potato as I just had a bit leftover. So easy to make and the cake is still moist after 4 days (yes we are slow cake eaters here). I will try reducing sugar even more next time to see how it goes. I highly recommend this recipe, especially since the inlaws loved it.
    I also left out the ganache and it is still good.

    I used this cake recipe (minus the ganache) to make a friends engagement cake. I then had 7 requests to duplicate the cake for a birthday. engagements and now a wedding.

    Tastes amazing. Just used a basic vanilla butter cream to layer and then cover. Amazing!

    I tried the receipe and the only thing I changed was cut the sugar down to 90g and I used 200g milk choc. I baked it in a bundt tin for 25 mins. The cake turned out extremely dry and it was awful to eat.

    Hello friends, I have made this cake twice, so easy, just slapped it in a square tin lined with baking paper, and cooked perfectly, does not sink in the middle, and cuts perfectly also. I have a friend who is coeliac,and I wondered how this recipe would go, subbing almond meal instead of flour? Any idea? Maybe more of a slice, than a cake? Appreciate your thoughts, cheers, sue

    I'm sure this has been asked before, but I can't seem to find any anwers having a quick read of the comments. How long would this cake last in the fridge? I'm thinking of making it for school lunches so would it last the 5 days in the fridge? Or would it freeze okay? I don't know if anyone can answer as it seems the cake gets in eaten in a matter of minutes!! lol

    Have made this cake twice now and it’s a winner for sure. A perfect go to for any occasion. So quick and easy but so delicious. Have done in a bundt tin and springform. My son liked the springform best because he said it was denser but they were both delicious. First time I only had brown sugar, not dark brown and wa still delicious. Cut the 2nd one to 200g of dark brown sugar and still fine. This cake stays moist for days, if it lasts that long.

    This is delish. My sister made it for my nephews second birthday and everyone loved it. I made a vegan version with egg replacer, dairy free white choc and nuttlex and it was great. I also reduced the sugar to 150g and it was perfect. Yum yum. Thank you.

    Delicious cake!! I did make the mistake of doubling the recipe today which was a fail! There’s too much in the bowl when the recipe is doubled and I had to mix on a higher speed which then over mixed it! Turns out perfectly when only doing one batch at a time!!
