Sweet Potato Cake
- 250 g sweet potato
- 200 g white chocolate
- 150 g Butter
- 30 g water
- 300 g Dark Brown Sugar
- 250 g Self Raising Flour
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
White Chocolate Ganache
- 110 g white chocolate
- 60 g cream

Recipe's preparation
Chop potato 5 sec/sp 7. Scrape down sides and add water. Cook 3min/varoma/sp 1.
Blend 10 sec/sp 7, scrape sides, blend again 10 sec/sp 7.
Add chocolate, butter and sugar and cook 6 min/90 deg/sp 1.
Add flour, eggs, vanilla and baking powder then mix 10 sec/sp 4.
Pour into prepared cake tin and cook 45 min at 175 degrees until skewer comes out clean.
Grate chocolate 10 sec/sp 7.
Add cream and melt 3 min/50 deg/sp 2
Pour straight over cooled cake or allow ganache to cool then spread over cake.

I made this yesterday gluten free and with dairy free chocolate and dairyfree cream. It was delicious. It was a tad sweet for me as I've cut back on my sugar however taste delicious. You can't taste the sweet potato at all. Kids and parents loved it and said it was moist. Today (one day old cake) still taste good but not as moist as first day. I'll definitely make it again

Made for the first time as a birthday cake so made 2 smaller cakes and layered them with ganache which I doubled. Used Caramilk in the cake and white chocolate for the ganache. It was absolutely delicious. I'll definately be making it again.

I wanted a thick ganache so I used double the chocolate in the ganache.
I used a 20cm cake tin which was too small. Next time I will either halve the cake recipe or use a square tin.
100% recommend this cake.

I reduced the sugar to 150g and chucked in a little more sweet potato as I just had a bit leftover. So easy to make and the cake is still moist after 4 days (yes we are slow cake eaters here). I will try reducing sugar even more next time to see how it goes. I highly recommend this recipe, especially since the inlaws loved it.
I also left out the ganache and it is still good.
