Sweet Potato Caramel Mud Cake

Sweet Potato Cake

  • 250 g sweet potato
  • 200 g white chocolate
  • 150 g Butter
  • 30 g water
  • 300 g Dark Brown Sugar
  • 250 g Self Raising Flour
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder

White Chocolate Ganache

  • 110 g white chocolate
  • 60 g cream

Recipe's preparation

    Cake
  1. Chop potato 5 sec/sp 7. Scrape down sides and add water.  Cook 3min/varoma/sp 1.

    Blend 10 sec/sp 7, scrape sides, blend again 10 sec/sp 7.

    Add chocolate, butter and sugar and cook 6 min/90 deg/sp 1.

    Add flour, eggs, vanilla and baking powder then mix 10 sec/sp 4.

    Pour into prepared cake tin and cook 45 min at 175 degrees  until skewer comes out clean.

     

  2. Ganache
  3. Grate chocolate 10 sec/sp 7.

    Add cream and melt 3 min/50 deg/sp 2

    Pour straight over cooled cake or allow ganache to cool then spread over cake.

    I wouldn't call it healthy but my kids don't know it has sweet potato in it and they like it. I got 12 cup cakes and 18 mini cupcakes from this reciepe. Very happy

    Hello deliciousness!!!

    I made this cake for my birthday buddy at school and had so many requests for the recipe!!! I halved the sugar I put in.

    I used buttercream icing as my ganache was a bit of a flop.
    Made 2 small cakes for layering and 6 muffin size ones for lunch boxes.

    Can't wait for the next occasion to crack this one out again!

    I made this for my sons birthday last week. Massive hit! I only added 200g of sugar as per previous posters and other than that stuck to the recipe. I did however bake in a bundt pan. Easy and delicious. This will be a go to cake whether it be for a celebration or just because. Thanks for sharing

    This is such a great recipe. I made it Gluten Free by doing a straight swap with GF flour - also I only used half the sugar - Rapadura - instead of brown sugar. (May be even more caramelly with brown sugar.) The ganache was very runny so I left it to get quite cold before putting on the cake. I used a 23cm Bundt Pan to avoid the sinking in the middle as per a few previous comments. Will be making this again for sure.

    Made one earlier in the week for a birthday cake and it was delish!! Have another 2 baking for the party on the weekend. I used 2/3 of the sugar, but next time will half the sugar. Made a perfectly flat cake, with the help of some tea towles wrapped around the tin, perfect for decorating!

    I was surprise how yummy it was & i fooled my son who thought it was the best ( i just forgot to tell him it had sweet potato in it) hehe. I had normal brown sugar not dark I would reduce sugar next time. Wasnt a fan of the icing i did add vanilla bean paste thought it was very sweet. Next time i would either do cream cheese icing or serve it warm just with whipped vanilla bean cream. Will be making this again. tmrc_emoticons.)

    Delicious! I used closer to 300g sweet pot and just 200g brown sugar. Also used a White choc cream cheese frosting instead of the ganach (http://www.recipecommunity.com.au/baking-sweet-recipes/white-chocolate-cream-cheese-icing/77669). Need to be careful that the oven temp isn't too high... slow and steady worked best for me with this cake.

    I made it with 150g white choc and 200g sugar, was delicious. Did a trial one to test the flavour and though delicious, it domed and cracked a fair bit. I then followed the instructions at this link: http://acozykitchen.com/how-to-bake-flat-cake-layers/ and baked a further 2 cakes perfectly flat, perfectly cooked! The flavour was divine.

    I used this to make a layered cake for my son's birthday and topped it with maple cream cheese frosting, absolutely divine and many comments from guests. 1st layer was baked 2 weeks in advance and frozen. 2nd layer baked 36 hours before and left on bench. Both delightfully fresh and tasty at the party.

     

    This will be on regular rotation here for special celebration cakes. Thanks for the recipe

    Awesome cake!!  I cut back the brown sugar a bit as per other comments, and just used regular brown sugar.  It wasn't overly sweet which was really nice, comfortable to go back for a second piece!!  Delicious!!
