Sweet Shortcrust Pastry

  • 240 grams plain flour
  • 42.18 grams caster sugar
  • 150 grams Butter, cold and chopped

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Place 240g plain flour, 42.18g caster sugar and 150g butter (cold and chopped) into bowl. 30 sec/speed 8
  2. 1 min 30 sec/speedGentle stir setting. Meanwhile slowly add 45g icy cold water
  3. DoughDough mode/2 min 30 sec
  4. Wrap dough in cling wrap and place in fridge for at least 30min.
  5. Roll dough out on a lightly floured surface until 3mm thick.
  6. Bake the pastry in oven preheated to 180 degrees (if making a pie or dessert follow instructions on that recipe instead)
