Mini Gingerbread Loaves

  • 50 g Butter, cubed
  • 1 tbsp golden syrup
  • 1 egg
  • 115 g brown sugar
  • 155 g flour
  • 1 tsp baking powder
  • 2 tsp ground ginger
  • 1 tsp mixed spice
  • 195 g Milk

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 190°C and grease mini loaf tray

    Place a small bowl on top of TMX and weigh milk into it, add baking soda to milk and set aside
  2. Add butter and golden syrup - 1min 30sec/70°C/spd 1.5
    Add egg and brown sugar - 5 sec/spd 4.5
  3. Add flour, baking powder, ground ginger and mixed spice - 5 sec/spd 3.5
    Scrape down sides of mixing bowl
  4. Add milk mixture - 5 sec/spd 3.5

    Pour into greased mini loaf tray (1/2 fill) and bake in oven for 15-20 mins until a clean skewer comes out.

    Cool in tin for 5 min before turning out onto a cooling rack.

Tip

This can be cooked as 1 large loaf - increase baking time to 30-40 mins
