Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation
1. Place White Sugar into TM bowl. 8secs/speed9.
2. Place Flours and Butter into the bowl. 10secs/speed7.
3. Start with 10 Tablespoons of water through the hole in the lid and blend for 15secs/speed5. Check for stickiness with your finger through the lid. If too dry, add more water and mix again. If too sticky, add a bit more plain flour until it resembles a pastry.
4. Wrap into Thermomat or clingwrap for 20mins in fridge. If you want to skip this process, you may need to flour the board/bench a fair bit with flour to avoid sticking and roll out to about 2-3mm thin.
5. Cut out your shapes (circles for mince pies). (I use two different sizes for Fruit Mince Pies. I have used Robertsons Fruit Mince but recently made the Pear Fruit Mince from the Festive Flavour Cookbook and its delicious!)
6. Before cooking, mix an egg and glaze over the top of your pies, using a fork to jab through the tops of each mince pie to allow air through to avoid bursting.
7. Once cooked (10-12 mins on 180c) allow a few mins before placing pies on a cooling rack. Once cooled then sieve some icing sugar on each one. Then try and stop at one!

OMG! Delicious pastry. A bit like shortbread, goes really well with the fruit mince. Just made a double batch and whipped up 36 fruit mince pies. I think they are 1/3 cup muffin size.
