The BEST Granola Bars

  • 100 grams pitted dates
  • 70 grams raisins or sultanas
  • 40 grams crystalised ginger
  • 65 grams Nut Butter, (peanut butter or almond butter works well)
  • 90 grams Butter, cut into 2 cm cubes
  • 115 grams honey
  • 15 grams water
  • 140 grams rolled oats
  • 45 grams flour
  • 50 grams dessicated coconut
  • 65 grams Coconut sugar, (or brown sugar)
  • 75 grams almond meal
  • 1 level tsp ground ginger
  • 1 level tsp ground cinnamon

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180 C. Line a 20cm square slice tin with a baking sheet or baking paper.

    Add the dates, raisins (or sultanas), and crystallised ginger to the bowl and chop 3 sec/speed 7.

    Scrape down sides of mixing bowl with spatula and repeat chopping 3 sec/speed 7 if required until desired consistency. Scrape down sides of mixing bowl with spatula. Set aside.

    Place the nut butter, butter, honey, and into mixing bowl and melt 2 min 30 sec/60°C/speed 2. Scrape down the side of the bowl.

    Add the reserved date mixture.

    Add the rolled oats, flour, desiccated coconut, coconut sugar, almond meal, ground ginger, and cinnamon. Insert measuring cup into mixing bowl lid and with the aid of the spatula, combine 1 min/reverse/speed 1.5. Repeat if the mixture requires longer to evenly combine.

    Transfer the mixture into the prepared tin and press it firmly to ensure it is well packed and of even thickness.

    Bake the granola bars for 25-30 minutes or until golden brown around the edges and on top.

    Allow the bars to cool completely in the tin, and then cut them into bars. Store the bars in an airtight container. They can also be frozen for later use. Enjoy your homemade Thermomix granola bars!

Tip

I haven't tried these gluten free but you could try replacing the rolled oats with quinoa flakes and the flour with gluten free flour.
