Traditional Shortbread

Recipe's preparation

    Preheat oven 160 degrees.
  1. Mill Basmati rice into Rice flour 10 seconds speed 10, and set aside

  2. Mill Raw sugar into icing sugar 10 seconds speed 10.

  3. Add plain flour and rice flour back into mixing bowl and mix on speed 3 for 5 seconds.

  4. Add butter and mix on speed 6 for 5 seconds. Check and see if it resembles fine breadcrumbs.

    Then set toDough mode and knead for 30 seconds.

    It will come together like a dough.

  5. Turn out onto a floured board (using cornflour) or onto a Thermomat (dusted with cornflour).

    Gently form into a ball and either roll out, into a circle, onto greased and lined baking tray to 1cm thick.  Mark into 8 equal portions. Prick the top with a fork and pinch the edges.  Place into oven and bake for 30-35 minutes or until just showing a hint of colour.

    Remove from the oven and allow to stand for 10 minutes before transferring to a wire rack to cool.

    Store in an airtight container.

Tip

*Alternatively Roll out to 0.5cm and using a cookie cutter cut out shapes.  You can reform and roll again until you use all the dough.

Or cut into finger shapes or press into shortbread moulds that have been well dusted with cornflour.

If you have a cookie press shape into a log and push into press.  Press out shapes.

    Couldnt get this to work. The crumbly mixture didnt go well into balls so ended up putting it in a cake pan and leaving it as one piece. Smells good however isnt forming together well tmrc_emoticons.(
