Cake

  • 400 grams carrots, washed and roughly chopped
  • 3 eggs
  • 100 grams Pure Maple Syrup
  • 100 grams Coconut sugar
  • 160 grams oil, (I use rice bran oil)
  • 1 tsp vanilla essence
  • 1 tsp mixed spice
  • 1/4 tsp salt
  • 240 grams plain flour
  • 1 tsp bicarb soda

Icing

  • 220 grams raw sugar, milled 10 sec, sp.10 to icing sugar
  • 90 grams cream cheese
  • 45 grams Butter, at room temperature
  • 1/2 tsp lemon juice

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Cake / Cupcakes
  1. Preheat oven to 180°C.

    Grease cake tin/ line with baking paper or prepare (1tmrc_emoticons.8) cupcake tray and set aside.


    Place carrots into bowl and chop for 4 seconds on speed 5, longer for less chunky. Set aside.

    Place eggs, sugar, maple syrup and oil in bowl and mix for 5 seconds on speed 5.

    Add vanilla, spice, salt, flour and bicarb to bowl and mix for 10 seconds on speed 5.

    Add carrots and mix on REVERSE for 15 seconds on speed 2.

    Pour into cake tin/trays and bake until golden and bounces back when touched.
  2. Combine all icing ingredients in bowl and mix for 20 seconds on speed 6.

    Ice cake when it has cooled.
