  • 5 tablespoons water
  • 2 tablespoons Flaxseed Meal
  • 200 grams sweet potato, Raw, peeled & roughly chopped
  • 125 grams coconut oil, Melted
  • 1 tsp vanilla extract
  • 30 grams Maple syrup
  • 1/2 cup cacao powder
  • 2 tsp baking powder
  • 1 tsp Bi Carb Soda, Also known as baking soda
  • 2 tbsp Coconut Flour
  • 1 Handful Rasberries, blueberries or other, Optional: For garnish on top of brownies

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    To prepare flax "eggs"
  1. Combine water and flaxseed meal, mix together by hand. Leave to stand for 5 minutes.

  2. To make brownies
  3. Preheat oven to 180 degrees celsius.

  4. I use a silicon 12-hole muffin pan, no greasing needed. Otherwise grease or line your muffin pan or baking tin.

  5. Add the sweet potato, oil, vanilla essence, maple syrup and flax eggs to the Thermomix bowl. Speed 7 for 10 seconds.

  6. Scrape down the sides and add cacao, baking powder, bi carb soda and coconut flour. Speed 7 for 10 seconds.

  7. Allow batter to sit for 5-10 minutes then pour into muffin pan.

  8. Optional: put a raspberry/blueberry or other decoration on top of each muffin.

  9. Bake for 35 minutes or until a wooden skewer comes out clean.
