  • 1/2 Cup grape seed or olive oil
  • 1 vanilla extract
  • 1/2 Cup agave nectar

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180 degrees and line two baking trays with baking paper.

    Place flour, sea salt and baking powder into TM bowl, put in MC and mix together for 30 seconds on speed 2-3.

    Use spatula to scrape down bowl.

    Place oil, vanilla and agave nectar into TM bowl, put in MC then knead Dough mode on interval speed for 30 seconds.

    Use spatula to scape down bowl.

    Knead Dough mode on interval speed for 30 seconds.

    Remove mixture from TM bowl onto bench or board and fold in dark chocolate bits.

    Roll mixture into small balls and place on baking tray with space between each ball.  Using a fork flatten cookie.

    Bake at 180 degrees for 8-10 minutes or until semi firm.

    Remove cookies from oven and leave on tray for five minutes before transferring to cooling/wire trays.

Tip

You may need more baking trays depending on how big you would like your cookies.

When pressing down the cookies, wet the fork so the mixture doesn't stick to the fork.

Second kneading process may not be needed.

    This is a great recipe, quick and easy. I did mine in two batches and the first batch was a little soft and chewy in the middle (i only put them in for 8-9 min and they were slightly bigger than the second batch) and the second batch was nice and crunchy. Will be making these again tmrc_emoticons.)
