Weetbix Choc Chip Cookies

  • 150 grams Butter, softened
  • 3 level tbsp vegetable oil
  • 100 grams white sugar
  • 2 level tbsp golden syrup
  • 60 grams Milk, room temperature
  • 200 grams plain flour
  • 1 level teaspoons baking powder
  • 60 grams rolled oats
  • 1/4 level teaspoons salt
  • 3 Weetbix, crushed
  • 160 grams chocolate chip

    Preheat oven to 180°C fan bake. Line 2 baking trays with baking paper.
    Cream butter, oil, sugar, and golden syrup
    Place butter, vegetable oil, white sugar, and golden syrup into mixing bowl.
    🕒 20 sec | Speed 4
    Scrape down sides of bowl with spatula.
    Add milk and mix
    Add milk.
    10 sec | Speed 4
    Add dry ingredients (except chocolate chips)
    Add flour, baking powder, rolled oats, salt, and crushed Weetbix.
    15 sec | Speed 5 | Reverse
    Scrape down and repeat if needed until combined.
    Add chocolate chips
    10 sec | Speed 3 | Reverse
    Shape and prepare cookies
    Scoop 1 Tbsp portions of dough, roll into balls, and place on prepared trays. Flatten slightly with fingers or a fork. Add extra chocolate chips on top if desired.
    Bake
    Bake for 8–10 minutes, or until cookies are golden and slightly soft in the center.
    Cool
    Allow to cool on tray for 5 minutes, then transfer to a wire rack.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
