White Chocolate and Macadamia Cookies

  • 125 g Butter
  • 120 g raw sugar
  • 1 egg
  • 1 level tablespoon Vanilla Paste
  • 150 g spelt flour
  • 160 g self-raising spelt flour
  • 200 g White Chocolate Chips
  • 150 g roasted unsalted macadamia nuts

Recipe's preparation

  1. 1. Line a baking tray with non-stick baking paper. Preheat oven to fan160°C.
    2. Toast nuts in oven at 160C for 8-10 min, if you have not roasted them already.
    3. Place butter in to TMbowl, melt for 1.5 mins, 60C at speed 3
    4. Add sugar and egg, mix 10sec at speed 4.
    5. Add flour, mix 20 secs at speed 3
    6. Add nuts and chocolate chips, mix for 20secs, reverse at speed 4
    7. Roll tablespoonfull of micture into balls, place balls 3cm apart on lined baking trays. Flatten dough balls with spoon a bit.
    8. Bake for 15-20mins or until golden brown. Remove from oven and set asice fotr a few minutes to cool slightly, then transfer to a wire rack to cool completely.
