  • 320 g Whole Wheat, (or wholemeal flour)
  • 4 eggs
  • 1 tsp cardamom
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 165 g brown sugar
  • 200 g olive oil
  • 2 tsp vanilla
  • 90 g Desiccated Coconut
  • 3 carrots, chopped
  • 100 g walnuts
  • 150 g Milk

  • 330 g white sugar
  • 250 g cream cheese
  • 180 g Butter
  • 1 tsp vanilla

Recipe's preparation

  1. Preheat oven to 180 degrees C and line round or square cake tin with baking paper.

    Place wheat in TM bowl and mill 1 minute speed 9.  (skip this step if using flour)

  2. Add in spices, sugar, coconut and mix 5 seconds speed 5 on reverse, then tip into a clean dryg bowl and set aside

  3. Without cleaning bowl place carrots in and grate 5 seconds speed 6.  Scrape down edges of bowl.

  4. Add in oil, eggs, vanilla and milk, and mix 5 seconds speed 5

  5. Add in dry ingredients and mix 10 seconds speed 5 reverse

  6. Scrape down sides of bowl , add in walnuts, and mix another 5 seconds speed 5 reverse

  7. Pour mixture into pan and bake 1 hour until cooked through

  8. Turn out onto wire rack and cool completely before icing

  9. For icing, mill white sugar for 1 minute 30 seconds speed 9, scrape down sides of bowl and then add remaining ingredients to bowl.  Mix together 30 seconds speed 5.  Spread over cooled cake to serve
