Recipe is created for
PREHEAT OVEN TO 175C FAN FORCED
1 1/2 cups + 1 tablespoon all-purpose flour
2 teaspoons baking powder 1/2 teaspoon salt
1 cup plain whole-milk yogurt
1 cup plus 1 tablespoon sugar
3 extra-large eggs
1 lemons rind
1/2 teaspoon pure vanilla extract
1/2 cup vegetable oil
PUT ALL INGREDIENTS IN THE TM BOWL ON SPEED 7 FOR 20 SECS THEN SCRAPE DOWN THE SIDES. MIX AGAIN ON SPEED 4 FOR 10 SECS.
Then ADD 1cup & 1/2 of Mixed Berries, fresh or frozen, thawed and rinsed WITH THE REST OF THE INGREDIENTS INSIDE THE TM BOWL ON
RINSE TM BOWL
Add 1/3 cup lemon juice and remaining 1 tablespoon sugar HEAT 80C SPEED until the sugar dissolves and the mixture is clear. Set aside.
When the cake is done, allow it to cool in the pan for 10 minutes before flipping out onto a cooling rack. Carefully place on a baking rack over a sheet pan. While the cake is still warm, pour the lemon-sugar mixture over the cake and allow it to soak in
Preheat the oven to 175c 50mins & 160c last 10 minutes. Grease/Spray a 200mm x 200mm x 57mm square pan.
