Zesty ginger oat & coconut crunch

  • 70 g Rice malt syrup
  • 150 g SR flour
  • 1.5 level tsp ginger powder
  • 75 g Shredded coconut
  • 165 g rolled oats
  • 125 g Coconut sugar

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat oven 180 degree and prepare rectangular slice tin (11 by 34 by 25 cm). Add cubed butter and rice malt sugar to bowl and cook for 2.5 mins, 100 degrees speed 2. Add all remaining dry ingredients for base and whiz for 10 secs speed 4 reverse, scrap down bowl and whizz for 4 sec speed 4 reverse. Place in tin and cook for about 25 mins until golden.

    For icing: add butter & rice malt syrup to clean TM bowl. Cook 1 min, 100 degrees, speed 2. Add remaining dry ingredients and whiz for 4 seconds speed 4. Spread on cooled slice.
    So yummy and wholesome!
