- 250 g zucchini, roughly chopped
- 185 g Butter, cubed
- 2 tsp Orange rind, finely grated
- 220 g caster sugar
- 2 eggs
- 60 g orange juice
- 230 g self-raising flour
- 90 g Butter, cubed
- 240 g icing sugar
- 45 g orange juice
Place zucchini into mixing bowl and chop 3 sec/speed 5. Set aside. Rinse and dry mixing bowl.
Place butter, orange rind and sugar into mixing bowl. Mix 30 sec/speed 5. Scrape down sides of bowl. Mix 1 min/speed 4.
With blades rotating at speed 4, add eggs one at a time through the hole in the mixing bowl lid.
Add juice and flour and mix 20 sec/speed 5. Scrape down sides of bowl.
Add zucchini and mix 10 sec/speed 3.
Pour batter into greased and lined slice pan. Bake 40 mins at 180°C. Stand for 5 mins before turning onto wire rack to cool.
Place sugar in mixing bowl and mix 5 sec/speed 9 to remove any lumps.
Add butter and juice and mix 30 sec/speed 4.
When cake is completely cold, spread with frosting, cut and serve.
To get excess cake batter from blades use and press Turbo for 1 sec twice.
