Ingredients

Boxing Day Bircher Muesli

  • 1 orange, peeled, with no pith, halved and pips removed
  • 50 grams almonds, raw or roasted, whole, flaked or slivered
  • 2 tablespoons honey, optional
  • 1 apple, large, preferably green, unpeeled, quartered and core removed
  • 100 grams rolled oats
  • 200 grams yoghurt
  • 200 grams Milk
  • 50 grams sultanas

Recipe's preparation

  1. Place the peeled, halved orange in mixing bowl, blend for 10 seconds on speed 9.
  2. Add the almonds and chop for 5 seconds on speed 6 (speed 4 for slivered or flaked almonds).
  3. Add 1 cored and quartered apple (and 2 tablespoons of honey, if using) and chop for 5 seconds on speed 5.
  4. Add the rolled oats, sultanas, yoghurt and milk then mix for 15 seconds on speed 2 reverse.
  5. Put into a container and refrigerate for at least one hour.
  6. Serve as is or topped with additional fresh fruit and or seed/nut mixture and a light sprinkle of cinnamon or other spice.

Tip

We were introduced to the orginal recipe for this Bircher Muesli by my friend Leah for Boxing Day Breakfast, but it's an easy make-ahead breakfast for summer. It will feed 4 hungry people.
Bircher Muesli transports really well in a food thermos if you need 'breakfast to go'.
Milk and yoghurt can be substituted for dairy free products.
Almonds can be substituted for other nuts.
You can increase or decrease any of the ingredients to your preferences.
Bircher Muesli will keep in the fridge for up to five days if you use a clean serving spoon every time. If it becomes thicker than you want, add a little extra milk or yoghurt or orange juice.
If you want a creamier, more indulgent Bircher Muesli, substitute half or more of the milk or yoghurt for cream.
The recipe can be safely increased by 50%.
