If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- 1. Add 100g Brown Sugar and 30g Water to TM bowl.
2. Cook 15mins/120C/speed 1/MC on.
3. Add 500g Raw Sugar, Lemon Slices and 260g Boiling Water.
4. Cook 40mins/120C/"Counter-clockwise operation" /speed 1/MC off.
5. Place simmering basket in TM bowl and strain into sterilised jar.
6. Leave to cool with lid off.
