Yoghurt
- 1000 g Milk, full cream
- 40 g honey
- 40 g raw sugar
- 1 tsp vanilla extract
- 120 g pot set greek or natural yoghurt, eg. Jalna, Farmer's Union, etc (needs min 10% fat)
Recipe's preparation
Clean bowl, blade, lid and seal thoroughly
Place milk, honey, sugar and vanilla extract in TM bowl. Cook for 30 minutes at 90 degrees on speed 3
Remove mixing bowl lid and allow milk to cool to 37 degrees (takes about 60-90 mins, put a timer on so you don’t forget!) Remove skin that may have formed on the surface of the milk during cooling time.
Turn your Thermomix on and place TM bowl on to unit. Ensure the 37 degree light is out. If the 37 degree light is on, it could be anything up to 49 degrees. The 37 degree temp is very important for the yoghurt to be a success. You need to wait for the 37 light to go out so you know it is no hotter than 37 degrees.
Once at 37 degrees, add the natural or greek yoghurt (starter) and mix for 4 seconds on speed 4.
Cook for 20 minutes at 37 degrees on speed 2 At this time fill your Thermoserver with boiling water to pre-warm.
When the 20 minutes of cooking is finished – drain your water filled Thermoserver – then pour the cooked milk from the TM bowl into your Thermoserver.
I then wrap my Thermoserver in a towel or blanket to keep warm for a minimum of 6 hours (leave it somewhere in the house where it will be left undisturbed). The longer you leave it the thicker it gets. It is imperative that you do not disturb your yoghurt during this time period.
Pour the yoghurt into a Tupperware container and also reserving 120g in a smaller container to keep to use as my starter for my next batch.

I love this recipe - just enough sweetness for the kids. I also add 50g milk powder and leave it for 8-10 hours to ensure it is dollop thick. Yum!
