Maple Walnut Pancakes

Ingredients

3 portion(s)

  • 35 g linseed, whole
  • 30 g walnuts
  • 120 g plain flour
  • 1.5 teaspoons bicarbonate soda
  • .5 teaspoon baking powder
  • pinch salt
  • 250 g buttermilk
  • 50 g maple syrup (real)
  • 1 egg
  • 1 teaspoon oil - any type, to cook
  • Butter, to cook and serve
  • extra syrup, to serve

Recipe's preparation

  1. Mill the linseed for [size= 12px; background-color: #ffffff; line-height: 1.5]10 seconds on [/size][size= 12px; line-height: 1.5]speed 8.[/size]

    Add nuts Closed lid turbo-pulse 2 to 3 times.

    Add remaining dry ingredients 5 seconds,[size= 12px; background-color: #ffffff; line-height: 1.5] Counter-clockwise operation[/size][size= 12px; background-color: #ffffff; line-height: 1.5] speed 6 [/size][size= 12px; line-height: 1.5]to aerate and combine.[/size]

    [size= 12px; line-height: 1.5]Add buttermilk, egg and syrup 10 seconds, Counter-clockwise operation speed 6.[/size]

    [size= 12px; line-height: 1.5]Heat and lightly oil a heavy based non-stick pan or grill plate. Add a tiny bit of butter (approx 1/4 teaspoon) and when this immediatley bubbles and melts without burning, the pan is at the correct temperature. [/size]

    [size= 12px; line-height: 1.5] [/size][size= 12px; line-height: 1.5]Drop a large 'glug' of batter from the jug into the pan. When bubbles begin to form on the top of the mixture, flip over to with a spatula. Continue with the remaining batter. [/size]

    [size= 12px; line-height: 1.5]The thermoserver is perfect to keep your pancakes warm while you finish cooking. [/size][size= 12px; line-height: 1.5]You should get approx 6 large, thick fluffy pancakes. [/size]

    [size= 12px; line-height: 1.5]Serve hot with a little butter and additional maple syrup, or top with warm berries, grilled or fresh banana, stone fruit etc. [/size]

    These are intended to be a healthier option and so if you are not used to a low sugar diet they may not be to your taste.
    You can add a little white sugar along with the nuts if you like them sweeter.

    These were ok, i didn't have walnuts so i used almonds instead. I think next time i would add some fruit or a sweetner for some extra flavour.

    I used extra walnuts, blueberries and maple syrup (def real) to top and it was a great combination of flavours. 

    This goes on the favourites list for sure.
