Buttermilk Pancakes
- 550 g buttermilk, (or 525g milk and 25g white vinegar - let sit for 5 mins for instant homemade buttermilk)
- 1 egg
- 1/2 tsp vanilla extract
- 350 g plain flour
- 3.5 tsp baking powder
- 1 tsp salt
- 25 g sugar

Recipe's preparation
Add all ingredients for pancake batter into Thermomix and mix for 10 secs on speed 5, make sure all batter is combined, mix for addition few secs if needed.
Preheat non stick fry pan over moderate heat. Once the pan is the right tempature, add a knob of butter to pan and fry your pancakes. A pancake is ready to be turned over when it's dry around the edges and bubbles have formed over the top.

Tip
Optional: After you mixted the batter let it rest in the refrigerator for 10 minutes, or even overnight if you have time. This will allow the gluten to relax so the pancakes will be tender, and lets the baking powder form bubbles in the batter. After the batter rests there is no need to remix.
*I like to make this the night before so all I need to do in the morning is cook them.

I used a combination of wholemeal Spelt flour and GF plain flour and used the homemeade buttermilk option.
Didn't have time to leave overnight but that didn't seem to matter- kids devoured them and have asked that they now be our pancake recipe go-to.

LOVE them! This is our go to pancake recipe now! The whole family loves them! Makes enough for our family of 5 to get atleast 5 each for brekky from one batch.
We do find with buttermilk it's too strong for us so we either do half buttermilk and half normal milk or the milk and vinegar measurements. Though we prefer the milk and vinegar mix.

I have used this recipe many times now. I always use the vinegar to milk version and it has yielded consistently delicious pancakes. I let it rest overnight (when I'm organised enough). It does thicken up quite a bit. I just add a little extra milk and it's perfect. Thank you.

Made for Christmas morning breakfast and they were beautiful. Was told 3 times by a nephew that they were really good. Will definitely make again. We have tried with store bought buttermilk, Thermomix buttermilk (milk leftover from making butter) and also homemode buttermilk (with milk and vinegar) and all varriants turned out fantatsic. Pancakes always kept warm in the Thermomserver whilst waiting for them all to cook.
