Barbs Cheese Scones

SCONES:

  • 225 g self-raising flour
  • 1 pinches salt
  • 1 pinches cayenne pepper
  • 1 tsp baking powder
  • 55 g Butter, cut into cubes
  • 100 g Cheddar cheese, cut into cubes
  • 80-90 g Milk, plus extra for glazing

OPTIONAL:

  • 3 slices pepperoni (hot salami)

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    DIRECTIONS:
  1. Preheat oven with the baking tray inside to 200.C (180.C fan forced)
  2. Measure into Tmx, flour, salt, cayenne pepper and baking powder.
  3. Turbo twice to ensure all ingredients are thoroughly combined.
  4. Add butter cubes and cheese cubes and pulse to make breadcrumbs. (Add pepperoni or tomatoes at this stage).
  5. Add 3/4 of the milk and mix (just to combine) on Knead setting. Watch thru lid - may need to add more of the millk.
  6. Lightly flour a surface and roll out the dough to approximately 2cm thick.
  7. Cut out the scones with a medium cutter (OR CUT INTO MINI SQUARE SCONES) and place on a 2nd cold baking tray lined with baking paper.
  8. Glaze the tops of the scones with the extra milk.
    Then transfer from the cold tray onto the hot oven tray using the baking paper as a slide. IMPORTANT TO FOLLOW THIS STEP.
  9. Bake in bottom of the oven for 10-15 minutes or until golden brown and cooked through.

Tip

I love the mini scones, feeze once cold.
Defrost in microwave on Defrost Setting about 20 secs till warmed through.
Cut in half, add a little Lurpak butter to each half - the Perfect Mouthful!
