Brown bread with cracked wheat

Ingredients

Cracked wheat

  • 60 grams cracked wheat or bulgur
  • 200 mls Boiling Water

Bread dough

  • 1/2 cup buttermilk, or 1/2 cup milk with 2 tspns vinegar added
  • 140mls water
  • 2 teaspoons honey
  • 2 teaspoons dried yeast
  • 40 grams Butter, chopped
  • 1 tablespoon molasses
  • 120 grams wholegrain flour
  • 370 grams bakers flour
  • 1 tablespoon Gluten flour
  • 2 teaspoons bread improver
  • 20 grams sesame seeds
  • pre soaked wheat
  • 2 teaspoons salt

Recipe's preparation

    Pre soaking the wheat
  1. 1. Place the wheat in a seive and rinse well.

    2. Place into a heat proof bowl and cover with boiling water. 

    3. Let soak for 30 minutes then drain and set aside.

  2. Bread dough
  3. 1. Add buttermilk, water, butter and honey to Closed lid.

    2. Blend at 37C/ 3 minutes, sp 2.

    3. Add yeast and blend sp 3 / 10 seconds.

    4. Add remaining ingredients in the order listed

    5. Move dial slowly to speed 7 /  to combine ingredients, using your spatula to assist if neccessary.You need to use your judgement here. If the dough is crumbly and heavy add water 1 tblspn at at time to create a soft dough. Or add flour the same way if it is too wet. You want a soft slightly sticky dough.

    6. When dough is combined knead Dough mode5 minutes.

    7. Tip onto a silicon mat or into a greased bowl, cover and leave to rest for 15 minutes.

    8. Tip dough onto a lightly floured bench and punch down.

    9. Shape into a loaf and place inside a greased bread pan.

    10. Cover lightly with greased cling wrap, and put in a warm place to rise for about 1/2 an hour, or until doubled in size.

    11. Spray surface lightly with water and sprinkle with rye flakes, bran flakes or barley flakes (optional).

    12. Place into a cold oven set to 180C and bake for 25-30 minutes or until baked.

Tip

I just LOVE this bread...so delicious with sweet or savoury topping! And the rich golden brown colour from the Molasses..Mmmm...

Try it toasted with honey..I'm sure this was the bread Pooh Bear ate when he talked about brown bread with honey...tmrc_emoticons.)
