Coconut & Almond Naan (Paleo)

Ingredients

2 portion(s)

Naan Bread

  • 100 grams almonds, (or almond flour)
  • 60 grams Arrowroot Four or Tapicoa
  • 100 grams full cream coconut milk, (1 cup)

Optional

  • to taste salt
  • Ghee, to cook in or put on top
  • Coconut Oil Spray, or other oil to cook in if required

Recipe's preparation

    Naan Bread
  1. 1. Place almonds in mixing bowl and grind into meal 10 sec/speed 10.

    2. Add arrowroot flour, coconut milk and salt to taste. mix 5 sec/ speed 6. Scrape down sides and mix again 5 sec/ speed 6 into a  smooth batter.

    3. Heat a non stick frying pan over medium heat (optional: add some ghee,  coconut spray or other oil) and pour the batter to desired thickness (see notes below).

    4. Cook till bubbles appear on the service the the naan and looks firm and mostly cooked (about 2-3 min), flip over and cook the other side briefly

Tip

* You can cook 2 large naans, or 6-8 small ones by dropping 3-4 scoops of batter at the time (or more depending on size of pan).

* You can use this recipe as a base for many other things like samosas, turnovers, empanadas, sweet pancakes, pizza base etc.

    Very nice flavour.

    I seemed to need more coconut milk as the batter was very thick, but it tasted delicious straight out of the pan. Thanks!
