      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat oven to 190 degrees Celsius. Line baking tray with baking paper and set aside.
  2. Place flour, salt and butter in mixing bowl. Mix 10 sec/speed 6 or until it resembles breadcrumbs.
  3. Add milk and knead 30 sec/Closed lid/Dough mode.
  4. Transfer to a lightly floured surface or ThermoMat and shape into a 17cm round. Cut a deep cross in the dough and lightly brush with milk.
  5. Bake for 30 min in preheated oven or until golden and hollow sounding when tapped on top.

Tip

Can be frozen for up to 1 month. Variations: Add 100 g grated cheese to the mixture before adding the milk and sprinkle with a little extra cheese before baking. I also add 2 tablespoons of chives or parsley. If you want it to be sweet, add 2 tablespoons golden syrup and 2 tablespoons caster sugar to the mixture with the milk. The milk can be replaced with beer - this makes it lighter and fluffier.

    I used Gluten Free SR Flour, lactose free milk, & Nuttlex & it turned out awesome.
    Perfectly baked in 30 mins. Lovely crunchy crust. Will definitely be making this a regular. It's so quick and easy, and only 4 ingredients I've usually always got on hand.

    The damper turned out just like the picture and was so easy to make. Followed the recipe exactly, shaped to 17cm as directed, the deep cross made for a lovely golden crust. While the damper was in the oven I made a pumpkin soup to serve with it, made for quick dinner on a chilly night.

    I've made this one before and tonight had to whip up 4 batches for a scout meeting cook up. It's quick, works perfectly & when the right consistency is reached it just falls out of the bowl with no residue. Tonight it's cold so it seemed to need a little less milk to achieve this.
