EVERYDAY CHIA BREAD - Easy, Easy, Easy!

4

Ingredients

16 slice(s)

Bread

  • 330 grams water, luke warm
  • 1 tbsp Yeast, heaped
  • 1 tsp sugar
  • 400 grams bakers flour
  • 200 grams wholemeal plain flour
  • 1 tbsp bread improver
  • 2 tsp salt
  • 15 grams Olive or vegetable oil
  • 20 grams chia seeds, black or white
5

Recipe's preparation

    Preparation
  1. 1. Place water, yeast and sugar into TMClosed lid and mix 20 sec/speed 2

    2. Add flours, bread improver, salt, oil and chia seeds and knead - 8 min/Closed lid/Dough mode

    3. Lightly spray ThermoMat with oil (or use a glass bowl - lightly oiled) and tip dough onto mat, wiggling the base of blades (under bowl) to get dough out

    4. Leave in a warm spot to rise for at least an hour. If you can leave for 1.5 - 2 hours, that is great too

    5. Give the dough another light kneading by hand and place inside bread tin (good quality tins with heavy bases are best). With wet hands, wipe dough lightly and leave to rise again, until approximately the same height as tin. ** Preheat oven to 200 deg

    6. Place into hot oven. After 5 min drop temp to 180 deg and bake for approx 25 min. Remove from tin and bake for another 10 min

    * Cooked bread will sound hollow when tapped on the bottom

Tip

** To help bread to rise, you can fill the TMClosed lid with boiling water and place ThermoMat on top of the lid (with MC removed). You can place in front of the family heater (if it is running), or warm some heat packs and place near dough.

** Wait until the bread is cooled before slicing. For even sized slices, suitable for sandwiches, I use an electric knife and plastic slicing guide (which I purchased from House). These things are gold!! I don't buy bread anymore.

** Shape into rolls or a breadstick if you please.

** I've started adding 1 tbsp of linseeds to our loaf, to give us a little extra Omega-3 in our diets.

I turned this into rolls, and subbed 100g of milled wheat grains for the wholemeal flour, replacing 100g wholemeal flour with extra bakers flour. Well recieved by kids! It rose much faster than my usual bread recipe does - I'll probably reduce the yeast a bit next time and just leave it to prove for longer.

I'd all but given up on making edible bread in my Termomix (usually they are too dense) however this bread turned out well enough to give to the kids for school lunches. I love that Chia is added and it tastes delicious. Thank you!

  • Made this bread and family

    Submitted by bernie13 on 7. April 2016 - 12:26.

Made this bread and family loved it. Didn't include the bread improver and turned out fine and lasted around 4-5 days in airtight container. A regular now in our household.

Has anyone attempted this using gf bakers flour? Wondering if it needed any adjustments? I have my loaf proofing now but would be great to know for next time.

  • I've forgotten to add bread

    Submitted by KrissyB on 7. September 2014 - 21:35.

I've forgotten to add bread improver before... It worked out just fine, although more dense (and less 'fluffy'). So give it a go, it won't hurt to leave it out tmrc_emoticons.)

  • Hey, yes for sure.. Just use

    Submitted by KrissyB on 17. July 2014 - 16:57.

Hey, yes for sure.. Just use Bakers flour. And if you use wholemeal, I just use plain. You can also leave the chia seeds out or swap them for grains if you prefer. Good luck!!
