Pita Bread (adapted from Not Quite Nigella)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add yeast, honey and 120g tepid water to bowl and mix for 3 min at 37 degrees 0.5 reverse speed.

    Leave undisturbed in the bowl for 10 minutes until frothy.

  2. Add flour, oil and another 180g of tepid water.

    Mix 6 sec, speed 6.

    Add salt.

    Knead 2 minDough mode

  3. Allow to rise for 1 hour in a warm area.

    Preheat oven to 275 degrees C or the hottest it will go.  Put a pizza stone or oven tray in the oven while it is heating.  For the pita to puff up the oven and pizza stone or tray need to be very hot.

     

  4. While oven is preheating, divide the dough into six balls and place on a lightly floured surface and cover and allow to rest for 15 minutes.

    Then flour the surface again and roll the balls out into circles.

    Gently carry two rounds to the oven and bake each for 3-4 minutes unti they puff up.

    Using tongs, gently turn over and bake for another minute or two.
