  • 500 g water
  • 2 tsp dried instant yeast or 20g fresh yeast
  • 410 g spelt flour
  • 140 g wholemeal flour
  • 3 tsp salt
  • 50 g rolled oats
  • 60 g sunflower seeds
  • 30 g pepitas (pumpkin seeds)
  • 30 g Linseeds
  • 20 g sesame seeds
  • 10 g honey
  • 30 g olive oil

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Preparation
  1. 1. Place water and yeast into mixing bowl and heat 2 min 30 sec/37deg C/peed 2. Meanwhile, grease a deep-sided loaf tin (approx 25x10x11cm) and set aside.

    2. Add all other ingredients into mixing bowl and knead 2 min 30 sec/Dough mode. Dont be alarmed dough is wet and sticky

    3. Transfer dough into prepared loaf tin and leave to prove in a warm place until doubled in size (approx 40 - 60 mins) - Or if i'm lazy I leave it in the Thermomix bowl.

    4. Preheat oven to 180 deg C. Bake for 60 to 80 mins depending on the crunch you like! Serve warm - yum, or transfer to a wire rack and allow to cool completely (ensures a crunchy crust) and store in an airtight container.

Tip

Due to using spelt and wholemeal this bread is lower in gluten but still contains gluten. It keeps really well and is delicious. It also slices thinly. If you dont have all the seeds, dont worry, experiment with different seeds - I also add slivered almonds sometimes.

    Love this recipe. Have cooked it several times now. At step 3 I leave it in the bowl to rise for 30 minutes & re-knead for 30 sec. Then, into the tin/s - i literally pour it in and stretch it about with a spatula - sprinkle over some of the seeds, rise 45 mins, bake.

    This made a lovely large loaf of delicious Spelt bread.
    it was easy to make and sliced up beautifully on my slicing machine.
    i will be making this bread from now on as it has lots of health benefits like
    helps to lower bad cholesterol.
    I would like to buy Spelt grain and grind it in my TM first.
    plus will try it with wholemeal Spelt.

    This was delicious if not just a little too salty for my taste- I'd lower the salt to 2 tsp next time.

    I only had 200 g of wholemeal spelt so used that and increased wholemeal flour.

    Also, subbed buckwheat groats for pepitas and chia seeds for sesame cos that's what I had on hand.

    Other than that, LOVED it!

    A common problem I'm encoutering when cooking any bread recipe is that the bread has a really dough-like/sticky consistency - similar to banana bread- after cooking. Is there someone out there that can shead some light? #strugglestreet

    My kids loved this bread, which says a lot.  I chose this recipe as I had all the ingredients in my pantry and i'v been wanting to add more seeds to my loaves.  I did add in 2 tbs of yeast, to ensure my loaf rose.
