      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Dough
  1. 1. Add water and dried yeast to bowl, heat 2 mins/ 37 deg/speed 2
    2. Add flour and salt mix for 6 secs/speed 6
    3. Using dough function knead for 1 min 30 seconds
    4. Turn bowl upside down to remove dough onto a thermomat. With slightly oiled hands transfer dough into an oiled bowl.
    5. Let dough rise in a warm place for 2-3 hours
    6. Place Dutch oven with lid in oven at 220 deg for a fan forced for 30 minutes prior to baking.
    7. Using a dough scraper fold the dough inwards about 6 folds to form a roundish shape. Sprinkle with flour if required.
    8. Transfer dough onto baking paper with seam down, smooth side up and reshape to be roundish
    9. Remove Dutch oven from oven and transfer dough into pot.
    10. Bake 30 minutes with lid on, remove lid and bake for a further 12 minutes.
    11. Remove bread from Dutch oven immediately and allow to cool before.
