  • 70 grams rolled oats
  • 20 grams rice bubbles
  • 85 grams Coconut
  • 125 grams brown sugar

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Line a 19cm x 29 cm lamington pan / slice tray.

     

    2. Combine weet-bix, dried apricots and dried apples - 10 seconds / speed 8

     

    3. Add oats, rice bubbles and coconut - 5 seconds / Speed 5 Counter-clockwise operation

     

    4. Set oat mixture aside

     

    5. Combine brown sugar, honey, peanut butter and butter.

     

    6. Melt ingredients - 4 minutes / 100 degrees / Speed 1 Counter-clockwise operation

     

    7. Cook 3 minutes / Varoma / Gentle stir settingCounter-clockwise operation

     

    8. Cook a further 5 minutes / 70 degrees / Gentle stir settingCounter-clockwise operation.  Mixture should slightly thicken

     

    9. Add oat mixture to bowl with honey mixture and combine 30 seconds , Speed 3 Counter-clockwise operation

     

    10.  Press into pan and refrigerate until set (minimum 1 hour)

     

    11.  Cut into desired serving size pieces

Tip

Can be made with any dried fruit or fruit medally. 

Can drizzle white chocolate ober the slice before cutting.

    Could you leave the peanut butter out? this sounds perfect for school, except my children's school is nut-free.
