Apple Cake Super Moist!

Ingredients

8 portion(s)

apple cake

  • 600 grams apples, around 4-5 according to the size
  • 200 grams white sugar
  • 200 grams Plain White Flour 00
  • 3 eggs
  • 70 grams margarine
  • 50 grams sunflower oil
  • 16 grams Yeast, 1 sachet bought in supermarket
  • 1 pinch salt
  • cane sugar, if you ulike
  • small pieces Butter, if you like
  • 1 lemon zest

Recipe's preparation

  1. peel the apples and cut them into slices and put on them the lemon juice to avoid oxidation. Don't throw away the lemon zest.


    Grease a cake pan (26 cm) and preheat hoven at 180 degrees celcius.


    Put the lemon zest and the sugar into the Closed lid for 5 sec. at speed 7. Add the eggs, the margarine, the sunflower oil and combine on speed 5 for 30 sec. Add the flour, the yeast and the pinch of salt again for 30 sec at speed 5. You will get a very soft "cream".

  2. Pour half of the cake into the cake pan and cover with half of the apple slices. Then pour the remaining cake and add the remaining slices of apples

  3. And last but not least: if you like you can sprinkle some brown sugar and some little slices of butter to form a soft crust.

  4. Cook for 40-45 minutes and then leave the cake to cool down before serving. Buon Appetito!

Tip

yes, this will not be the lightest cake if you're on a diet, but sometimes we need confort food! I use to eat this cake for breakfast, I feel less Guilty. But: you can use low fat white yogurt instead of the sunflower oil and you can reduce the quantity of the sugar. You can also skip the last passage of the cane sugar and slices of butter, the cake will be fluffy and moist in any case.  I used golden gala apples, but granny smith will be fine. Ciao!

    Very good recipe, it did take the full 45minutes to cook, I used gluten free flour and it still seemed to work out well.

    I adjusted a few things to suit what I had in the pantry:

    150g Raw Sugar, 200g Plain Flour, replaced 70g margarine with 70g Butter, replaced 50g Sunflower Oil to 30g Coconut Oil, 1 tsp dried yeast, 1/2 tsp Cinnamon & 30g milk.
