- 2 apples, peeled and quartered
- 35 g water
- 1 tablespoon lemon juice
- 4 egg yolks
- 150 g raw sugar
- 50 g Apple Vodka (or similar)
- 500 g marscapone cheese
- 250 g sponge fingers
- 250 g apple juice
- 25 g apple vodka
- 1 tbsp sugar
- 1/2 tsp cinnamon

Recipe's preparation
Place the cored apples into the mixing bowl and chop 30 secs/speed 4. Scrape down sides of bowl.
Add water and cook 8 mins/90deg/speed 4
Add lemon juice and blend 30 secs/speed 8. Put to one side to cool.
Place egg yolks, sugar and apple vodka into the mixing bowl and cook 5 mins/80deg/speed 4.
Add the marscapone cheese and mix 20 secs/speed 4.
Set aside to cool at least 30 minutes.
Mix the apple juice and vodka in a bowl and dunk the sponge fingers through, then line the base of a rectangular dish with them.
Spread half the apple sauce over the fingers and then half of the cheese mixture.
Repeat with one more layer of soaked sponge fingers, apple sauce and the rest of the cheese mixture.
Chille at least 3 hours then sprinkle with mixed sugar and cinnamon
