Baked Durian Cheesecake

  • 20 g raw suagr
  • 100 g plain flour
  • 50 g Butter, cubed
  • 1/2 teaspoon salt
  • 2 tablespoon cold water

  • 100 g raw sugar
  • 20 g Corn Flour
  • 150 g whipping cream
  • 200 g sour cream
  • 4 eggs
  • 600 g durian

Recipe's preparation

  1. Base:

    1. Place raw sugar (120g) into bowl and mill for 10 seconds on speed 9.  Set aside 100g of milled sugar for filling

    2. Place flour, butter and salt into TM bowl and mix for 10 seconds on speed 6.

    3. Add water and mix a further 5-6 seconds on speed 6 to form rough dough.

    4. Turn mixture onto floured ThermoMat and knead lightly.

    5. Keep in fridge for 15mins and then roll out to line the bottom of a buttered springform pan.

    6. Place baking weights and bake for 15-20mins at 200 degrees. (Should be slightly golden brown)

     

    Filling:

    1.Set 37 degrees, 10 minutes, Speed 3. Note: this is NOT intended to keep going for the entire 10 minutes, it’s just to ensure the heating element continues at 37 degrees.

    2. Feed in cream cheese by breaking up the blocks one at a time, until well combined.

    3. Slowly add in remaining sugar, then the corn flour until well combined.

    4. Switch off and add the butterfly attachment WHILE cheese is still in the bowl.

    5. Turn on to Speed 3 while adding in eggs (4) and sour cream (200g). Scrape down sides if required.

    6. Add durian (600g) and mix for 1minute at Speed 3.  The mixture should be homogenous.

    7. Butter the sides of the springform pan and pour mixture directly onto base.

    8. Bake for 10 minutes at 200 degrees then reduce heat to 100 degrees and continue to bake for another 45 minutes.

    8. Turn oven off, allowing cake to cool for a hour with oven door ajar.

    9. Place in fridge (preferably overnight).

Tip

Keep an eye on the cake while its baking in its final 15mins, turn the oven off when the filling is set but still wobbly at the centre.
