Banana Cheesecake

Ingredients

Base

  • 100 grams Butter, cubed
  • 200 grams Plain Biscuits (nice, milk arrowroot, or make your own)
  • 1/2 teaspoon cinnamon

Cheesecake mixture

  • 250 grams Philadelphia cream cheese
  • 150 grams sour cream
  • 2-3 bananas, peeled & halved
  • 60 grams honey
  • 40 grams Boiling water
  • 3 teaspoons Gelatine powder
  • 80 grams lemon juice

Recipe's preparation

    Base
  1. Melt butter in TM Bowl for 2 mins / 60° / speed 2 making sure that butter is completely melted before moving on to next stage.  Add biscuits and cinnamon and mix for 20 secs / speed 6, stopping half way to scrape down edges.

    Press the mixture over the base of a lined 20cm spring-form tin. Chill for approx 30 mins.

  2. Cheesecake mixture
  3. Add boiling water to a small bowl and sprinkle with gelatine and stir until gelatine is completely dissolved.  Add lemon juice, stir and set aside.

  4. Add cream cheese, sour cream, banana and honey to TM bowl and mix for 20 secs / speed 6.  Add gelatine mixture and combine for another 10 secs / speed 6.

    Pour the mixture on top of the biscuit base and chill in refrigerator for 3-4 hours until the cheesecake is set.

  5. Remove cheesecake from springform tin and top with sliced fruit OR for a speedy and effective topping, spoon the pulp of one or two passionfruits over the top.

Tip

Rather than making one large cheesecake, you could make 12 muffin sized portions.  Using patty pans to line the muffin tin makes it easier to serve and add to lunchboxes!

    I chose this recipe because if it's simplicity and ingredients list - I had everything in the pantry.

    Firstly I have to say I did take quite a few liberties with this recipe like doubling amount of cheese and honey and increasing banana and using guar gum to thicken, so I take responsibility for the outcome.... BUT....

    To me a cheesecake should taste cheesy with a particular and this ended up tasting mousse-like and too banana-ery for my liking.

    That doesn't mean to say this isn't a good recipe but rather it taught me what I really like about cheesecakes and this recipe didn't do it for me.

    It would be interesting to hear from others who have tried it.
