Brookies- A cross between chocolate brownies and cookies
- 70 g Chocolate Buttons, Sweet William
- 70 g cocoa
- 350 g Icing sugar mixture
- 1/2 tsp salt
- 4 egg whites
- 1 tsp vanilla extract

Recipe's preparation
- 1. Line a shallow rectangular baking tray with baking paper.
Preheat oven to 180 degrees
Weigh 70g chocolate buttons - 2. Chop for 3 seconds on speed 7
"Blend" and place in a bowl aside until later
- 3. Insert butterfly whisk.
Weigh all dry ingredients:
350g icing sugar mix
70g cocoa
1/2 tsp salt
Mix for 5 seconds on speed 2 - 4. Add 4 egg whites and 1/2 tsp vanilla esscence.
- 5. Stir for 10 seconds on speed 2
scrape down the sides of the bowl and then stir for 5 seconds on speed 2 - 6. Remove butterfly whisk and stir in grated chocoalte
- 7. Pour into tray and spread evenly
- 8. Bake for 20-25minutes in preheated oven until glossy and cracked on top.
- 9. Let the brookie cool before lifting out of the pan.
Chop into pieces.
Serve on its own or with ice cream for a dessert.
