  • 100 grams white sugar
  • 100 grams brown sugar
  • 40 grams golden syrup
  • 1 can condensed milk
  • 1 teaspoon Vanilla Bean Paste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place butter, sugars, golden syrup, condensed milk and vanilla into TM bowl. 12 min, Varoma, Speed 2.


    Then 10 min, 90 deg, Speed 2.


    Add white chocolate melts, 2 min, Speed 3.


    Pour into lined 20cm square or V-mould tin and refrigerate till firm. Can be decorated with extra melted chocolate. Freezes well.

    Thermotastic Trina:
    I usually let it set overnight, then cut it and freeze it.
    If it's too gooey to cut freezing it first.
    Also something I have found since posting this recipe is Aldi condensed milk doesn't work as well as Nestle.

    Can I ask how long you think it should take to set? Going on 5 hours now and still stretchy and gooey, not a firm set fudge. Followed recipe exactly. Thoughts?
