Choc Peppermint Sticks - Paleo / Gluten Free

Ingredients

  • 120 gram coconut oil, melted
  • 80 gram raw cacao powder
  • 80 gram almond butter
  • 40 gram Raw Honey
  • 10 gram vanilla extract
  • 1/2 teaspoon Peppermint Extract or Essential Oil
  • pinch of salt
  • 1/2 cup unsweetened shredded coconut
  • 1/2 Cup pecans

Recipe's preparation

  1. - Add pecans and chop 3-5 secs / Sp 5. Transfer to a bowl

    - Add coconut oil, cacao powder, almond butter, honey, vanilla peppermint and salt. Combine 5 secs / Sp 4.

    - Heat mixture 3 mins / 55 deg / Sp 2.

    - Add nuts and coconut and combine 10 secs / Counter-clockwise operation / Sp 5

    - Pour mixture into a 7x5-inch dish lined with parchment paper

    - Freeze until choclate is set then cut into sticks.

    - Store in airtight container in freezer

    Very nice, though next time I’ll use more peppermint essence as we could hardly taste the peppermint. I used roasted almonds as had no pecans. Will def make again!

    Sensational!! I didn't have pecans so I used hazelnuts. I also left out the oil as we don't use it and just used a bit of almond milk instead and they turned out perfectly. Will definitely be keeping a stock in the freezer.
