  • 3 medjool dates, pitted
  • 30 grams dessicated coconut
  • 200 grams banana, cut into pieces
  • 250 grams Milk of choice

  • 2 1/2 tablespoons arrowroot flour or Cornflour

Recipe's preparation

  1. Place dates and coconut into mixing bowl and chop 20 seconds on speed 8, until very finely chopped. Scrape down sides of mixing bowl with spatula.
  2. Add banana and blend 10 second on speed 4, or until smooth.

Tip

Omit the cacoa or cocoa powder for banana flavoured pudding, which is delicious served warm with stewed fruits.

To make it runnier or more like a custard, use 1.5 tablespoons of arrowroot or cornflour.

This is a great lunchbox alternative for Yogos or other chocolate or banana puddings.
