      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 160 C.

    Cover 2 baking trays with baking paper.

     

    Place sugar into bowl and mill 10 sec/speed 10. Set aside and clean and dry bowl completely.

     

    Insert butterfly.

    Add egg whites and salt. Whisk for 3 minutes on speed 3.

     

    Once egg whites are whipped, keep blades turning on speed 3 and add sugar gradually.

    Weigh in choc chips and sifted cocoa and gently fold with spatula. It will create a marble effect. Try not to over mix.

     

    Drop mixture by heaping tablespoons onto trays and cook for 35-40 minutes. Cool slightly before taking off trays.

Tip

You can adjust the sugar level to your liking, adding more or less.

If using caster sugar, you can skip the 1 step.

    next time i would cook for only 30 minutes as i like meringue a bit more chewy and when adding the sugar you do need to aim for adding the sugar to the sides, i had a little bit clumped in the blades. however very easy receipe and with these adjustments it is going to be a winner!
