Chocolate Mousse - Thermomix Benelux - ThermoFun

Ingredients

Chocolate Mousse

  • 250g milk chocolate melts
  • 130g Milk
  • 500g thickened cream
  • 50g raw sugar

Recipe's preparation

    Chocolate and milk
  1.  

    1. Place chocolate in TM bowl and grate 10 sec / speed 8.
    2. Add milk 2 mins / 50°C / speed 1. Scrape down and repeat. Set aside in a bowl.
  2. Place butterfly in TM. Add cream and sugar and mix 1 min / speed 3 / MC off

  3. Chocolate Mousse
    1. Gently fold whipped cream through the chocolate mix (in the separate bowl that you have set aside, with aid of spatula), and then pipe immediately into individual bowls or pour into one large bowl.
    2. Allow to set in fridge for a few hours.
    3. Decorate with whipped cream and grated chocolate.

    So yum! I only had normal dairy milk chocolate and recipe worked out perfectly. Next time I will use dark chocolate and a lot less sugar in the cream. Raw sugar worked. The mousse wasn't grainy at all

    I used quality cooking choclate, 50% less fat cream, half of the milk and half of the sugar. Does not have the same consistency (i.e. lots of little pockets of air) like some of the other mouse recipes. However its consistency was firm and close enough. Very tasty too!

    Very nice and super easy.
    Used castor sugar (about 35g) as per recommendations in comments. Will try using eating chocolate (or cooking longer) next time as my cooking chocolate was a little grainy.

    Highly recommend this for a mousse recipe. Much easier than egg white recipes. I took previous comments on board, using 30g sugar (which I milled beforehand) so it wasn't gritty.

    My cream turned to butter within seconds. Not sure if it's the cream I used, the bowl still being warm from melting the chocolate or the very hot weather. Incase it was the type of cream, I used Gippsland pure double cream and only had to whisk it for 20 seconds on speed 2. I suggest to watch the cream. The second you see it get thicker, stop it.

    I have a question for those people who changed the chocolate melts to dark/white... did you stick with chocolate melts or use 'eating' chocolate?  I want to make this for dinner guests and need it to be spot on.  Also, could I use icing sugar to avoid the 'grainy' texture that is commented on?

    Tastes great but definitely needs way more than 50 seconds to mix.  I ended up on speed 4 and was probably close to 2 minutes mixing.  Looking forward to dessert tonight!

    Good recipe.

    I have a TM5 and you need to speed up the cream in order for it to get the right consistency.  Bit too sweet as well, next time will halve the sugar and use dark chocolate.

    Isn't this more a chocolate custard instead of mouse? 

    I always thought a mouse was with eggs because otherwise you can't have that typical mouse consitency. How can this properly thicken if you don't have anything like egg white or gelatine?

    Really yummy and simple thanks. But I also had a problem with it being too runny. I had to leave it in for longer than 50secs. I think next time I will do it at speed 4 and put less sugar in also. Thanks

    Have made this quite a few times now and it's always a winner. I melt the chocolate for 5 mins as I find if I don't the mousse is quite grainy and I also drop the sugar to 30 grams as I find the full 50 grams is way too sweet for me. I have also doubled this recipe and it's worked quite well. Thank you for a wonderful, quick and easy recipe

    This is restaurant quality! So easy and delicious. the only thing I did was melt the chocolate and milk in a bowl in the microwave to avoid washing the thermie bowl twice (lazy  tmrc_emoticons.))

    I made this for my dads birthday, it was amazing! I used white chocolate instead of milk and coloured it green to make some hulk mousse. I topped it with crushed biscuits for hair and drew faces on the glass, they were amazing. EVERYONE loved them and wanted more, best mousse recipe I have ever come across!

    Just a note for UK readers : I used 200g of Menier dark cooking chocolate and 50g of Menier's milk chocolate. I did not add any sugar. I have needed to warm the chocolate longer than the given time. For those who are looking at this for the first time: you are in for a treat  Love

    This didn't work well for me. Sugar made it grainy and crunchy, and it was too runny even after I whipped for a bit longer. It also wasn't chocolatey enough, was a light colour and tasted like plain cream.
