Chocolate Truffles EDMONDS

  • 200 gram raw sugar
  • 100 gram cooking chocolate (dark or milk)
  • 50 gram Butter
  • 1 teaspoon cocoa
  • 1 tablespoon Rum
  • Coconut

Recipe's preparation

  1. Place raw sugar in mixing bowl. Mill 20 sec/speed 10. 

    Set aside.

    Place chocolate in mixing bowl. Chop 5 sec/speed 8. 

    Add butter. Melt 4 min/50º/speed 1.

    Add half sugar. Blend 10 sec/speed 4.

    Let cool until about 37º.

    Add rum, cocoa and remaining sugar. Blend 10 sec/speed 4.

    Using teaspon or tablespoon to scoop mixture, shape into balls.

    Roll in coconut.  

    Chill until firm.



Adaptation of "Edmonds Cookbook - chocolate truffles"  44th edition (199tmrc_emoticons.8) page 219.


Baileys truffles - substitute rum for baileys.  Also could use white chocolate (if using white chocolate omit cocoa).

Kid-friendly chocolate truffles - substitute rum for vanilla essence.

Make sure you let the mixture cool down before adding liquid and remaining sugar.
