- 180 grams filtered water
- 600 grams Milk
- 60 grams Rapadura or Raw Sugar
- 1/4 teaspoon himalayan sea salt
- 1 teaspoon Vanilla Bean Paste
- 2 eggs

- 3 tablespoon coconut cream
- 20 grams rapadura sugar, extra, for sprinkling

Recipe's preparation
Place the pearl tapioca into the bowl, add the water and leave to soak for 30 mins. Do not drain the water after soaking
Add the milk, sugar, salt, vanilla bean paste and lightly beaten eggs into the bowl and mix on /sp 2/20sec
Insert the butterfly and cook for 12mins/90deg/ speed 2
Pour into serving dishes, swirl the cococunt cream and sprinkle with the extra sugar.
Serve warm or chilled with sliced mango and passionfruit.

Tip
Chocolate Tapioca:
add 2 tablespoons of Raw Cacao with extra 2 tablespoons of sugar when adding the milk
Dairy Free:
Replace the milk with unsweentened coconut milk or almond milk
