Coconut and Apricot Chia Pudding

  • 120 grams Chia Seeds (White)
  • 410 grams Apricot Halves in Juice, (Tin)
  • 1 teaspoon vanilla extract

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place coconut milk, chia seeds, vanilla and honey in the bowl Closed lid
    Add in 250 grams of apricot halves and 30 grams of the juice from the tin into the bowl.
    Cook for 5 minutes at 37 degrees on speed 2.5
    Refrigerate for a couple of hours or overnight.
    Serve with remaining apricots and a sprinkle of slivered almonds.

    You can vary with other canned stone fruit such as peaches, mangos, etc...
